Spinach 'Olympia' is a flat-leaf type with exceptional flavor. Slow-bolting with heavy, dark green leaves that can be harvested young as baby spinach or allowed to grow more mature for bigger leaves. Fantastic in salads, sauteed in olive oil, and many other preparations.
